Low-temperature radiant-heat Cook-N-Hold ovens can rethermalize pre-prepared meals, roast and brown large quantities of meats, or slow-cook to maximize tenderness and flavor, among other tasks. The ovens reduce product shrinkage, offer menu flexibility, require no exhaust hoods or special venting, and transition seamlessly into existing kitchen space when replacing older cook-and-hold ovens, according to the company. The ovens are available in high-grade stainless steel or aluminum in full-size, split or under-counter configurations. The units can automatically switch to the “hold” mode, ensuring that cooked foods are kept in the food-safety temperature zone until serving time.
